Raw Apple Pie

Crust:
1 cup of cashew or pecans
1 cup shredded coconut
½ cup dates soaked and ground in a food processor
¼ tsp celtic salt
Filling:
3 apples cored
1 cup of dates soaked and ground in food processor
2 TBS lemon juice
1 tsp cinnamon
¼ tsp salt
1/8 tsp nutmeg or ginger
1 cup walnuts
Creamy drizzle topping:
½ cup soaked cashews
1 TBS of coconut cream
1 TBS water
1 dropper full of vanilla stevia


Soak dates, drain and set aside. Put cashews or pecans in food processor and process into powder. Add dates and coconut and salt. Grind together and press into small pie pan. Filling: soak dates and drain. Core apples and put into processor and add dates, lemon juice, cinnamon, nutmeg, ginger and walnuts. Fill pie shell and refrigerate. Drizzle top with creamy drizzle. After cashews are soaked for 3 hours drain and blend with other ingredients in a Nutri bullet or small blender. Drizzle over top of chilled pie.
