Ingredients
• 1 cup walnuts ground
• 1 cup diced tomatoes cooked down with jalapeno and green chili powder
• ½ tsp salt
• ½ fresh lime juiced
• ½ bunch of cilantro
• 6 Siete no grain tortillas (sauté in coconut oil)
• 1-2 cups Broccoli slaw (shredded broccoli stems)
Instructions
1. Chop walnuts and set aside
2. Dice 1 cup of tomatoes and add salt, jalapeno and green chili powder and cook down to a paste
3. Add tomato mixture to walnuts. Use as the taco meats
4. Wash and destem cilantro. Coarsely chop.
5. Heat tortillas in a dry skillet until they begin to bubble, filp to toast other side. Continue with remaining tortillas. Stack to keep warm and avoid drying out.
6. Assembly tacos with 1-2 Tbsp broccoli slaw and cilantro, lime and walnut meats mixture.
